Mary Henderson Carrot Cake

I was going through the many boxes of Mary's items and came across at metal box with her recipes. Yay!
I couldn't find this recipe, but my wonderful wife has it written down somewhere. I'll add it soon.

Cake Ingredients
1-1/2 cup Sugar
1/2 cup Dark Brown Sugar
1 cup Canola Oil
1 stick room temperature Butter
4 large Eggs
2 cup All-Purpose Flour
2 tsp Baking Soda
2 tsp Baking Powder
2 tsp Cinnamon
1/4 tsp Nutmeg
1 tsp Kosher Salt
3 cup grated Carrots
1 cup chopped pecans
1 cup chopped walnuts


Cake Instructions
Cream sugar, oil and butter until light and fluffy.
Slowly add eggs and continue creaming
Combine flour, baking soda, baking powder, cinnamon and salt, then add to previous ingredients, mixing slowly.
Fold in carrots and nuts, mixing well.
Put into 3 cake pans and bake at 300 degrees for 30-40 minutes until done.
Put baked cake onto racks to cool.

Frosting Ingredients
4 cups Confectioners Sugar (or a little less for less sweet icing)
16 oz package Cream Cheese
1 stick room temperature butter
4 tsp pure Vanilla Extract
1 cup chopped Pecans
1 cup chopped Walnuts

Frosting Instructions
Mix all frosting ingredients together.
Spread between cake layers and on top and sides.

Alan Notes
After I moved back from Alaska, my mother made German Chocolate cake for each birthday.
After my dad passed away in 2002, I asked my mom to make Carrot cake instead.
She asked me why. I told her because dad didn't like carrot and loved German chocolate.
Every year after, I had Carrot cake on my birthday until 2016, since mom died March 3, 2017.
Since then, I've had a hard time having a birthday.

March 2, 2021 & 2022
Kathy made me a Carrot Cake and we celebrated my birthday and it was just like mom used to make.
In 2022, I forgot to celebrate Dr. Seuss' birthday with green eggs and ham.

Updated 3/2/22. Kathy made a double batch of frosting so I updated the recipe.
