Baked Halibut

Ingredients
1 1/2 pounds halibut fillets
4 tablespoon Parmesan cheese, grated per fish piece
2 Shredded Wheat bars crumbled
1 tablespoon fresh parsley, chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon kosher salt
Dash freshly ground black pepper
2 tablespoons butter, melted


Instructions
Cut the halibut into 6-ounce servings.
Crumble 2 Shredded Wheat bars.
In a medium bowl, combine the crumbles with half the Parmesan cheese, parsley, garlic and onion powders, salt, pepper, and melted butter. Mix well.
Sprinkle crumb mixture on the halibut pieces; pat down to help the crumbs adhere to the tops of the fish fillets.
Bake the halibut fillets for about 8 to 10 minutes. The fish should be still opaque in the middle.
Add the remaining Parmesan cheese to the top and continue baking for 2-4 minutes until the fish registers 145 F on an instant-read thermometer.
Alternatively, test the fish flakes into sections and it is still be slightly opaque in the center.

Alan Notes
You can leave off the Shredded Wheat if you want a less crispy fish.
